Best Cupcake Recipe EVER

Hummingbird Bakery Vanilla Cupcakes OF JOY! Baked lovingly for my friend Doizy on her birthday, recipe below… (adapted from the Hummingbird Bakery recipe book)

120g plain flour

140g caster sugar

1½ tsp baking powder

A pinch of salt

40g unsalted butter, must be at room temperature

120ml whole milk

1 egg

¼ tsp vanilla extract

1 quantity vanilla frosting

Hundreds and thousands or other edible cupcake decorations

A 12-hole cupcake tray, lined with paper cupcake cases

Preheat the oven to 170C/325F/gas mark 3

NOW FOR THE PART I “ADAPTED”…

Instead of being a goody two shoes and following the recipe down to the smallest detail – just throw it all in a bowl and and give it a go with an electric beater for a few seconds until everything is mixed together and smooth in appearance.

Spoon into cupcake cases/tray and bake for 10-12 minutes until just golden – prick with a sharp knife, if it comes out clean the cakes are done.

Leave to cool, ice and decorate! Have a look online for whichever icing recipe you want or cheat like I did and buy ready-made vanilla buttercream a la Betty Crocker…
